Most gazpacho recipes typically include tomato and bread. However, there are many modern variations of gazpacho omitting those ingredients in favor of avocado, watermelon, grapes, meat stock, seafood, etc. Gazpacho has become an almost generic term for chilled vegetable soup. Here is an unusual yet amazingly refreshing watermelon gazpacho recipe.
Remove the seeds from the watermelon and dice into 1/2 inch cubes. Squeeze the orange juice. Peel and remove the seeds of the cucumber. Chop the peppers and onion. Place 1 cup of watermelon along with the orange juice, the red pepper, garlic, onion and celery in the food processor and blend. Add olive oil and season with salt and freshly ground black pepper. Transfer to a bowl, cover with kitchen foil and refrigerate.
When cool enough, ladle into cups or bowls and add the remaining watermelon cubes, chopped cucumber and pepper. Enjoy!
