Rice puddings are found in nearly every area of the world. In the Spanish speaking world the recipe is called simply Arroz con Leche. In Asia it is often refered to as Sweet Rice Porridge. The recipes vary greatly depending on the ingredients and the preparation methods. The following recipe is quick and easy to make at home.
Combine rice and water in a large pot and bring to boil. Reduce heat and let it simmer for a few minutes. When the rice absorbs most of the water, add the milk and stir occasionally. Add vanilla and salt and keep stirring. When the rice is completely cooked, add sugar and keep stirring until the mixture thickens. Pour into serving bowls and add a nip of butter on top of each bowl. This will leave the top soft and creamy. Let it cool and sprinkle with cinnamon. Garnish with fresh fruit or dark chocolate according to individual taste.
