How it's made:
This is one of my favorite summer meals. The feta stuffed tomatoes may be served as main dish or appetiser, warm or cold. It is easy to make and very light meal.
Select ripe but hard tomatoes. Slice off the top and scoop the inside of each tomato.
To prepare the stuffing, beat the eggs. Add the crumbled feta cheese, chopped basil and parsley. Season with black pepper and stuff the tomatoes. Arrange the tomatoes in a baking dish and cover each tomato with it's top. Chop the tomato pulp and place in the baking dish around the tomatoes. Pour 1/2 cup of water and bake in preheated to 400 ℉ oven until lightly browned.

4 eggs
350 gr. cheese
fresh basil
handful of fresh parsley
black pepper
