The one I usually use is sweet basil, as it is native to Bulgaria and easy to find. Basil is indispensable for many Mediterranean dishes. It’s sweet spiciness is excellent with tomato dishes. Its flavor is strong enough to stand up to the pungency of garlic, so it is often paired together like in Pesto.

Thyme is my favorite herb. Fresh garden thyme has subtle lemon, yet minty aroma and taste. In the Bulgaria it is more popular as a tea herb, but is also often used in soups and sauces.

Dill has a totally unique spicy green taste. Dill always brings in my mouth the taste of pickles and tartar but it goеs well with fish, cream cheese and grilled vegetables as well.

Parsley is a great all around herb. It quickly adds a touch of color and texture to any recipe.
Parsley has a delicate and non obtrusive favor that combines well with other herbs like basil, bay leaves, dill weed, garlic, marjoram, mint, oregano and thyme.
